It has always been Jacob’s dream to make his own wine. This dream grew from his work in French Michelin-starred restaurants, where he developed a passion for wine and became one of the co-founders of the Danish Sommelier Association. His dream was realized in 2009, when the first vines were planted, marking a new chapter in the story of Stokkebye.
Every wine is crafted according to organic principles, with equal parts love and passion. Here, the focus is on quality over quantity. That said, the Stokkebye family produces 10,000 bottles a year—equivalent to a small, top-tier Champagne house.
Creating wine with passion and love means it is made by hand. Much of what takes place in the vineyard today is done as it has been for centuries. It is rare not to find a member of the Stokkebye family in the vineyard, keeping a meticulous eye on every detail of the grapes and vines, and carefully removing weeds by hand.
The soil at Stokkebye is rich in chalk and minerals, which gives a distinct character to the wines, particularly the white wines, imparting a mineral and crisp profile with subtle elderflower notes.
Fifty percent of the Liva wine is fermented in barrels from Domaine de Chevalier in Graves, Bordeaux, where Jacob helped harvest white grapes in 1988, while the other half is fermented in steel tanks.
Once again, the circle completes; connecting the past, passion, and vision. As the ultimate declaration of love, the wines are named after the couple’s three children: Liva, Victor, and Stella.
