About the winery

A 7.5 ha organic estate in South Moravia focused almost exclusively on Sauvignon Blanc (around 80% of production), Fabig is one of the most precise expressions of the variety in the Czech Republic. The wines are structured around three tiers – Auspitz, SOUL (single vineyards) and BIG (flagship wines) – each reflecting a different level of site and selection. Led by Roman Fabig, Oenologist of the Year 2024, the winery has built a strong track record in Sauvignon Blanc, including repeated top rankings over multiple consecutive years and a historic 100‑point score in the national wine guide for a dry wine. Our line-up shows a full selection from fresh cuvée Auspitz through single-vineyard SOUL wines to structured BIG, including a traditional method sparkling. The younger vintage of the wine that achieved a historic 100‑point score can be tasted directly at the table.
