Weingut Vollmayer
About the winery
Our family estate, now in its fourth generation, stands for vibrant, mineral-driven wines from a truly unique German vineyard. Located by the western shores of Lake Constance near the Swiss border, we tend to our 15 hectares of vines planted on the slopes of an extinct volcano guiding them from cultivation and gentle cellar aging to the finished bottle. We cultivate our monopole site, the Elisabethenberg, directly on the sun-drenched southwest slopes of the Hohentwiel. Reaching elevations of up to 562 meters above sea level, it is registered as the highest vineyard in Germany. This unique cool-climate microclimate grants the grapes an extended ripening period, imparting an freshness to the wines. Here, our vines root deeply into dark, rare volcanic weathered soil, specifically the distinctive phonolite rock. At the foot of the slope, this volcanic foundation blends with the debris of ice-age terminal moraines. It is a lean, mineral terroir that lends our wines an unmistakable, taut finesse. This exceptional interplay of altitude and rock is where our elegant Burgundy varieties: Chardonnay, Pinot Blanc, Pinot Gris, and Pinot Noir—thrive, alongside classics like Müller-Thurgau and Sauvignon Blanc. Driven by deep conviction, our estate has been operating strictly organically since 2009. Our philosophy and goal are to capture what the vineyard gives us, honestly and unadulterated in the bottle. We rely heavily on manual labor, rigorous crop thinning at the vine, biodiversity in the vineyard, multi-pass selective hand-harvesting, and a gentle maturation process using native yeasts in the cellar. In this way, we bring the pure terroir of our mountain, authentic and unaltered, into the glass.
