We cultivate the vineyard organically, using geese to introduce essential microorganisms into the vineyard. We are working toward regenerative agriculture by adding organic materials to enhance the already fertile clay soil, creating a habitat for many small animals and microbiological life.
In 2024, we began planting flower strips and deep-rooted plants that decompose over the winter between the vines, allowing rainwater to naturally absorb into the soil during the wet spring months.
In 2019, we designated 792 square meters as a wildlife habitat for larger animals such as hares and roe deer, and in 2024 we began establishing a biodiversity garden near the part of the vineyard where we have a mini kiwi trellis and some old fruit trees. Here, we are working with a water basin, perennial plants, insect-attracting shrubs, and shelter belts.
We are committed to making the best wine with absolute passion. Our goal is to maintain the vineyard and winery to perfection. We ensure that the vines and fig trees stay strong and healthy without the use of pesticides or artificial fertilizers. The keywords are craftsmanship and patience.
In the winery, we work gently and carefully, using spontaneous fermentation as much as possible and allowing extended time on the lees. We give the wines time to develop, always working with nature in the process. Our skilled German oenologist ensures that the quality, flavor, and character are aligned with the grapes and the wine style and high quality we aim to achieve at Hideaway.
